For a spicy and rich garlic flavored healthy tomato ketchup recipe try this tomato ketchup recipe Indian style which makes an ideal accompaniment for bhajis, samosas, parathas and other Indian snacks
Ingredients:
- 1.5 kg Tomatoes (small medium size works best)
- 0.5 kg Sugar
- 1 Onion
- 1 Teaspoon of butter or vegetable oil (optional)
- 8 cloves of garlic
- 1/4 inch piece of root ginger finely chopped
- 2 Tablespoons of Chilli Powder
- 1 Tablespoon Garam Masala
- 50 grams of raisins or sultanas (soaked in water for about an hour)
- Salt to taste
- 2 Tablespoons Vinegar
Method:
Take your tomatoes and ensure they are clean by rinsing under the cold water tap. For tomatoes that are hard or not fully ripe bring a pan of water to the boil and place the tomatoes inside for 2 minutes ensuring they become soft. Take the tomatoes out of the water and blend in a mixer to a smooth puree consistency.
Finely chop the garlic cloves, ginger and onions and add to your tomato puree mixture and blend further. Add the chili powder, spices and salt. Gently fry your pre-soaked raisins with a little butter or oil and when soft add to the tomato mixture and blend again. Remove your mixture from the blender and add to a large pan where you should bring the mixture to the boil, lower the heat and cook slowly for maybe 10 to 15 minutes to allow the mixture to thicken. Add your vinegar and stir thoroughly.
Dispense using a funnel into a glass bottle or jar while still hot. If you wish for this recipe to keep for longer than a few days then you’ll need to add some kind of preservative at this stage, dissolve either 1 gram of Potassium Metabisulphite or 2 grams of Sodium Benzoate in a small amount of water and add to the mixture stirring thoroughly. If you use preservative it will keep for months if kept refrigerated.
